Fall is always my favorite time to make slow cooker recipes. Workdays are usually long and hard, and who wants to cook once they get home? I know I don’t! My family loves chicken recipes, and this one is an absolute favorite.

Recipe Ingredients:

  • 4-pack boneless chicken breasts.
  • 1 bag mixed vegetables.
  • 1 can cream of chicken soup.
  • 1 can cheddar cheese soup.
  • Heavy cream.
  • Salt and pepper to taste.
  • Garlic powder to taste.
  • 1 can refrigerated biscuits (I use the frozen ones to save time)

Recipe Basics For Shredded Chicken & Vegetables Over Biscuits

  • PREP TIME: 5 minutes
  • COOK TIME: 7 hours on low, 4 hours on high
  • ADDITIONAL COOK TIME: 22 minutes for biscuits (can be done while chicken is finished cooking and being shredded)
  • ADDITIONAL TIME: 5 minutes to shred chicken
  • YIELDS: 8-10 servings with 1 biscuit per person, 6 servings with 2 biscuits per person

Directions To Make The Slow Cooker Shredded Chicken & Vegetables

Step #1

Place chicken breasts (after trimming off the fat and any tough pieces) in the bottom of a lightly sprayed slow cooker, and season to taste with the salt, pepper, & garlic powder.

Place the frozen vegetables over the boneless chicken breasts.

Step #3

Add one can of the cream of chicken soup, then fill can with heavy cream and pour into crockpot.

Add the can of cheddar cheese soup, and then fill can with half a can of warm water and pour on top.

Step #4

Place the lid on the slow cooker, and cook on low for 7-8 hours, or high for 4 hours.

Step #5

Cook biscuits as directed. If you made homemade biscuits for this recipe, they should be ready to go by now.

Final Step

Take one biscuit and split it in half, pouring the chicken mixture on top. Enjoy!

Always store your leftovers in airtight containers, making sure the food is completely cooled before placing in the fridge or freezer.

How Long Can Leftovers Be Stored In The Fridge?

You can store any of the leftovers in the fridge for about 4-5 days.

Can The Shredded Chicken & Vegetables Be Frozen?

The best way to freeze this casserole is in individual portions. They will last 3 months in the freezer. When you are ready to use, thaw in the fridge for 24 hours before reheating.

What is The Best Way To Reheat This Recipe?

To reheat in the microwave, cover individual servings with a microwave-safe lid or paper towel (I always suggest wetting the paper towel), microwave for 90 seconds, stir, then microwave for 20 seconds more, if necessary.

When reheating the biscuits, put them on low heat in the oven for 4-5 minutes. You can also use the microwave, heating each one 15-20 seconds.
