Valentine’s Day is approaching, and I have gotten to the point in my life where I would rather stay in then go out and spend a fortune on a meal. Dessert is always a big part of that meal, so having some options to make at home for a lot less are just what I like. I think this recipe fits the bill well.
I don’t know about where you live, but it is fully a Winter wonderland in my part of the world. And when you are a Summer gal, it’s hard. I just want to be at my favorite vacation place with my husband and just reconnecting. - 1 4.4 oz (125g) white chocolate bar, chopped
- 2 cups heavy cream (the higher the fat content the better it will be)
- 1 teaspoon vanilla extract
- 1 tablespoon sugar (optional)
For the Raspberry Layer:
- 2 cups fresh raspberries
- 2 tablespoons sugar
- Juice of 1 lemon
Garnish:
- Raspberry
- Chocolate shavings

In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens slightly. Let it cool and then strain to remove seeds, if desired.
Step #2: Prepare The White Chocolate Mousse
Melt the white chocolate in a heatproof bowl set in the microwave for about 60 seconds, stirring occasionally. Once melted let it cool slightly.
In a separate bowl, whip the heavy cream, vanilla extract, and sugar until stiff peaks form.
Gently fold in the melted white chocolate into the whipped cream until well combined.
Step #3: Assemble The White Chocolate Raspberry Mousse Parfaits
Spoon a layer of the raspberry sauce into the bottom of each glass.
Carefully spoon or pipe the white chocolate mousse over the raspberry layer, filling the glasses.
Pro Tip: If you have tall glasses, keep repeating the layers for a fuller look.
Step #4: Chill And Garnish
Refrigerate the mousses for at least 30 minutes to set.
