I know that many people think that chili is a meal just during the Winter months. Not so! My family loves my slow cooker chicken chili ANY time! Prep time is minimal, and the taste results are amazing!

Slow cooker recipes have always been the kind that I can’t mess up. I am not a fantastic cook, and don’t have a knack for the fancy. That is why this is one of my favorites to make. There aren’t many steps, and no crazy ingredients.

*Prep time is approximately 10 minutes for browning the meat and chopping up the peppers and onions.

Is it OK to put raw chicken in the slow cooker?

Absolutely! This is great if you are short on time and just want to throw and go before work.

How long does the recipe take to cook?

*Cook time in the slow cooker is 4-6 hours on high and 8 hours on low.

Can you overcook slow cooker chili?

Unfortunately, yes you can. Overcooking the chili can make the beans mushy and the chili will take on a burnt taste and smell.

What white beans go with chicken chili?

Not everyone likes kidney beans in their chili. If you are a fan of white beans, use cannellini beans instead.

What tools do I need to make this recipe?

Here are some of my favorite kitchen tools I use when making this recipe. I love that clean up is kept to a minimum with this recipe. If you use a slow cooker liner, it is even easier!

I don’t like ground chicken; can I substitute another type of meat?

You can also substitute ground turkey for the meat, if you wanted a slightly different taste. And, of course, beef always works well in this recipe.

Here are the food ingredients that you will need. If you are looking to save money, you can use your local store’s generic store brand for things like the beans, tomatoes, and spices. And this recipe is also easily doubled if you need to feed a lot of people. Just have 2 slow cookers available.

  • 4 pounds ground chicken
  • 2 cans light red kidney beans~drained
  • 1 cans dark red kidney beans~drained
  • 1 large can whole, peeled tomatoes or a can of diced tomatoes~not drained
  • 1 large can condensed tomato soup (do not mix with water)
  • 1 cup diced, frozen green peppers
  • 1 cup diced, frozen onions
  • chili powder
  • dash salt and pepper(optional)

Directions For Preparation Of The Slow Cooker Chicken Chili

The steps for this recipe are really simple and can be done the night before if you are short on time. Before you leave for work in the morning, simply pull the slow cooker crock out of the refrigerator and turn it on!

Step #1:

Brown meat, drain, and add one half of the chili powder and stir thoroughly.

Step #2:

While the meat is browning, mix all other ingredients into the slow cooker.

Step #3:

Stir in the meat, adding the salt and pepper if you want.

Step #4:

Cook on low for 6-8 hours and stir once about halfway through.

You can eat this delicious meal alone or serve it with a side of salad and cornbread.

Slow cooker chicken chili is a tasty way to feed your family a warm meal.  You save time and energy in the kitchen as well, because other than browning the meat, the slow cooker does all the work.  There is nothing like coming home from work after a long day and walking into the door and smelling this delicious dish.
