One of my least favorite things about Winter is the cold and dark. So, what better way to warm up than a big bowl of soup. Today I am sharing a favorite recipe for spicy cheddar broccoli soup. Pair it with your favorite dipping bread for a filling meal on a Winter day.
I don’t know about you, but when I come home from a busy day at work, I don’t want to spend a ton of time in the kitchen. But I am also ready for a filling meal after all the heavy lifting I do at work. This recipe for spicy cheddar broccoli soup cannot be beat.

This recipe is so perfect because you only need 5 ingredients to make it. You can’t get any better than that. This would also be a great recipe to introduce your kids to cooking because of its simplicity.
- 4 cups broccoli florets. Fresh is best, however you can use frozen if you are in a hurry.
- 4 tbsp. minced garlic
- 3 1/2 cups chicken broth
- 1 cup heavy whipping cream
- 4 cups shredded spicy cheese. I recommend Member’s Mark Flamin’ Jack Cheese from Sam’s Club. If you don’t have a Sam’s Club near you, any cheese blend with Colby, Monterey jack, and jalapeno flavors.

How To Make This Cheddar Broccoli Soup Recipe
One of the things I love about this easy spicy broccoli cheddar soup is there is minimal prep time, as well as minimal cook time.
Step #1: Prepare The Garlic
In a large pot over medium heat, saute the garlic for 1-2 minutes or until fragrant.
Step #2: Create The Soup Mixture
Add in the chicken broth, heavy whipping cream, and the broccoli.
Step #3:
Bring the heat up to medium to high heat and allow the soup to come to a boil.
BONUS TIP: For an extra treat, make up a pan of pre-made crescent rolls to dip into the soup.
Step #4: Simmer The Soup Mixture
Once the soup starts to boil reduce the heat to low and allow to simmer for an additional 10-20 minutes or until the broccoli is tender.
Step #5: Add The Cheese
Add in 3 cups of the cheese and stir until melted. Once the cheese has melted, remove from heat. Allow to sit 2-3 minutes before ladling into a bowl. Serve with more cheese sprinkled on top.
