- 1⁄2 cup milk
- 1 can (4 oz) diced green chilies
- 2 cups shredded cheddar cheese
- ½ tsp chili powder
- ½ tsp cumin
- Salt and pepper
For a little bit of an extra kick (and to satisfy those cheese lovers) consider adding shredded pepper jack cheese to this recipe for a little more spice and flavor.

Preheat oven to 350 and prepare a 9 x 13 baking dish with cooking spray.
Step #2:
Add hash browns to bottom of dish and sprinkle with salt and pepper.
Step #3:
Sprinkle the onion and red pepper over the potatoes. Add half the green chiles and about half of the cheese to the top.
Step #4:
In a bowl, mix the eggs, milk, chili powder, cumin and remaining green chiles.

Pour over the potato and vegetable mixture, then top with the rest of the cheese.

Bake at 350 degrees for 45-55 minutes.
